After achieving a degree in agronomy, Jonatas Carneiro moved back to Carmo de Minas to put in to action what he learned about post harvest technology, soil mineralisations and new processing techniques on his families 100+ year old farm, Sitio Grota Funda.

Jonatas grandmother Helena named this plot Coqueiro in 1924, due to the abundance of coconut palms that surround the property.

This particular lot is very small and experimental. The coffee is picked with a high concentration of sugars, around 20+ Brix. The coffee is then sent to the patio for around 8-10 days and dried like a natural. Next comes lined tanks where it is rehydrated underwater for 24 hours. The coffee is then [pulped on a pinhalense with very little pressure. The skin is basically just burst and the farmers leave on as much honey fruit as possible. The lot is then dried for an additional 25+ days on raised beds much like a honey process, with contact attention to raking.
