Our first Costa Rican Honey in almost two years, this single origin comes from the Finca Sircof Estate located in the Central Valley coffee zone of Costa Rica.

Honey processed coffee is a unique process that is spreading throughout Central American countries, and has nothing to do with traditional honey at all. In the coffee harvesting process, the cherries are picked, sorted, de-pulped and then moved to drying patios or beds for various periods of time.

During the Honey Process some of the mucilage or pulp surrounding the bean is left on. This pulp is very sticky like honey. Because there is a degree of fermentation happening in the short amount of time it takes for the mucilage to dry, coffees processed in this way feature a little more acidity than Pulped Naturals (Pressure-Washed) coffees, but significantly less acidity than Washed or Natural/Dried-in-the-Fruit coffees.

Honey Processed coffee is one of our all time favorites and this offering is no exception. Boasting a light sweetness with notes of citrus, this coffee is one of the juiciest we’ve had in awhile and that makes for an excellent cup. Iced or hot, drip pot or Pour Over, this coffee will shine whichever way you prepare it.
